'They were born Nicaraguan' ó

'They were born Nicaraguans'

They were born Nicaraguan CITIZENS

Both are correct. They are both Nicaraguan, and here Nicaraguan is an adjective that describes them both. They are both Nicaraguans, and here Nicaraguan is a noun derived from an adjective that represents them both.

Two Nicaraguans entered my store. (Nicaraguan is being used as a noun)
or
Two Nicaraguan men entered my store. (Nicaraguan is being used as an adjective)
but not
Two Nicaraguan entered my store.
